Drizzle with oil, toss, and spread them in a single layer on sheets. It may not sound like much, but this flavor-packed breakfast is hearty with just the right amount of heat. Divide sweet potatoes between 2 rimmed baking sheets. The potatoes should look like little canoes. Step 1 Preheat oven to 400 degrees, with racks in center and lower positions.
